My only ones who ever got married took a whole book and more than a quest before they got married. (Which granted, in our society is weird but it was medieval and they were perfect for each other.) (Falaun and Arenna if you have seen some of my stuff.) The other pair takes a whole book just to become friends and don't even kiss till the end of the second book. (The books are 2-4 years apart Idk how long exactly yet.)

I try to avoid instalove because I know people hate it so I have:
Jon and Meg: Have a meetcute, but then leave without anything more happening. Jon tries to get her to join the rebellion but she refuses, seeing as her sister is part of what he's trying to overthrow. They still talk and such (and Jon is still very hung up on Oliver) and they kiss once, but that was because Meg needed to get him to stop talking so her sister didn't realize he was a traitor so she kissed him to make him stop talking. After Jon is captured in the war, Meg helps him escape after realizing that the rebels aren't wrong, and they fall in love then.

Nell and Therese: Pretty much instalove, they meet once and then meet up again, but fall in love over the course of the story.

Joan and Samuel: Fall in love (??? maybe??) while Joan gets Samuel safely to the rebellion (she doesn't know he's a spy) and bond during that.

Fern and Huxley: Slow burn, work through trauma together, screw up two different governments because taking down a corrupt ruler is a good first date.

I JUST REALIZED
THE SAME 3 FAMILIES ARE INVOLVED IN 2 LOVE TRIANGLES
Because there's the one that was the backstory one where Amira was in love with Emily, who was in love with Oliver and Oliver was in love with Emily.
But then 6 years later there's the one with Meg, Jon, and Oliver.
And Jon is Emily's younger brother and Meg is Amira's younger sister.

Going off of what Connie said, stories that combine unusual settings/plots/characters, etc.
Like an actor as the detective in a mystery/friendship story that was shameless self praise I apologize
