You'll Need The Following


  • 2 cups of uncooked rice

  • 4 chicken breasts

  • 1 teaspoon salt

  • 2 tablespoons paprika

  • 1/2 of a red onion

  • 1/2 of a can of diced tomatoes

  • 2 mini cucumbers

  • 1 cup of olives

  • 8oz of feta cheese

  • 10oz of hummus

Cooking Instructions


  1. Start with the rice. We use instant so it's just a 1:1 ratio of rice to water, boil the water, take off the heat and add the rice and just let sit covered for a bit. But however you cook your rice is fine!

  2. Cut the chicken breasts up into 1 inch or so cubes, add the salt and paprika and stir to coat.

  3. Put the chicken in a pan and cook it through. We do medium heat for 10 minutes, check the largest piece and add another 10 minutes if it's not fully cooked through. But really just making sure it's cooked all the way through is enough.

  4. Next get on with the veggies; just slice up the onion and cucumber. You can get fresh tomatoes if you like but we really hate dealing with them so we get canned wherever we can for those. Just make sure it's all diced up to relatively consistent size.

  5. If your olives aren't already cut up go ahead and do that too. You can use black or green olives, I don't like green olives so we go with a can of sliced black olives.

  6. Once everything's cooked and sliced divy it up; equal parts rice, chicken, and veggies. Sprinkle equal amounts of feta over each one, put a dollop of hummus (or yogurt or tziki or something) on the side, and serve with pitas.

And yes, the onions are raw. You can cook them if you want but the raw onion is absolutely the way this was intended to be eaten and it is pretty good ^
