You'll Need The Following
- 16oz of pasta of choice
- 16oz can of roasted red peppers
- 16oz of fresh mozzarella cheese
- 5oz of shaved parmesan cheese
- 2 tablespoons of white wine vinegar
- 1 tablespoon of paprika
- 1 cup of mayo
- 8oz of baby spinach
- 1 tablespoon of minced garlic
Cooking Instructions
- Cook the pasta as you normally would. I put it in a pot, cover with water, add 1 teaspoon of salt, bring to a boil, and let boil for 10 minutes but as long as the pasta is cooked it doesn't matter.
- While the pasta is cooking cube up the mozzarella and add it to a bowl with the red peppers (drained if you're using a jar with liquid like we did) and the parmesan.
- Toss the vinegar, mayo, paprika, and garlic in another bowl and mix well then set aside in the fridge.
- Put the spinach in a bowl in your sink, and once the pasta is cooked strain the pasta water into the spinach bowl to blanch the spinach.
- Drain the spinach, add cold water to the pasta pot, and repeat the previous step until the pasta is completely cold and the spinach looks kinda wilted like frozen cooked spinach. You want your pasta cold because otherwise the mozzarella and parmesan will start melting and that ruins the texture.
- Press the spinach to get as much of the liquid out as possible, then toss the spinach and pasta into the bowl with the cheese and peppers and mix well.
- Add the mayo sauce and mix again, then cover the pasta salad and put it in the fridge overnight.
This is meant to be eaten cold, so pull it out of the fridge and enjoy. We will def be making this as a snack from now on ^
