You'll Need The Following
- 1 pound of chicken
- 1/2 cup of soy sauce
- 1/2 cup of Thai chili sauce
- 2 cups of instant rice
- 2 cups of water
- 10oz bag of shredded veggies
- 2 tablespoons of sriracha
- 4 tablespoons of mayonnaise
- Optionally some sesame seeds to sprinkle on top
Cooking Instructions
- Start with the chicken - we use boneless skinless chicken thighs but really any kind of chicken will do. Put the chicken in a slow cooker, add the soy sauce and chili sauce, and add enough water to cover the chicken. Cook on low 6-8 hours or high 3-4 hours, or until the chicken is cooked through and falling apart.
- Once the chicken is done turn the slow cooker off and get started on the rice. We just like instant rice; 2 cups rice with 2 cups of water, heat to boiling, turn the heat down and let cook for 15 minutes. But again, you can do your rice however you like.
- Our shredded veggies was just a bag from the store's salad section containing broccoli, kohlrabi, brussels sprouts, red cabbage, carrots, and kale. Really just take about the right amount of veggies and throw them in a pan with about 1/4 cup of the broth/sauce from the slow cooker and cook until the veggies are soft and have absorbed most of the liquid.
- While that cooks mix the sriracha and mayo together. You don't have to use sriracha, you can use any hot sauce you like or just mix in a few tablespoons of the broth/sauce from the slow cooker to add in the extra needed flavor.
- Finally, just assemble the dish; start with a base of rice, add the chicken and veggies on top, drizzle with the mayo sauce, and add a sprinkle of sesame seeds if you like. We have a mix of dried seaweed, sesame seeds, and other things that pair well with soy sauce-like flavors and it's really good on top too.
This is a relatively quick and easy dinner to put together, and we really like it. I can thaw the chicken overnight, throw it in the slow cooker in the morning, and at dinner all I have to do is cook the rice and veggies and it's so good. 100% on our list of regular dinners.
