You'll Need The Following


  • 1 pound of chicken

  • 1/2 cup of soy sauce

  • 1/2 cup of Thai chili sauce

  • 2 cups of instant rice

  • 2 cups of water

  • 10oz bag of shredded veggies

  • 2 tablespoons of sriracha

  • 4 tablespoons of mayonnaise

  • Optionally some sesame seeds to sprinkle on top

Cooking Instructions


  1. Start with the chicken - we use boneless skinless chicken thighs but really any kind of chicken will do. Put the chicken in a slow cooker, add the soy sauce and chili sauce, and add enough water to cover the chicken. Cook on low 6-8 hours or high 3-4 hours, or until the chicken is cooked through and falling apart.

  2. Once the chicken is done turn the slow cooker off and get started on the rice. We just like instant rice; 2 cups rice with 2 cups of water, heat to boiling, turn the heat down and let cook for 15 minutes. But again, you can do your rice however you like.

  3. Our shredded veggies was just a bag from the store's salad section containing broccoli, kohlrabi, brussels sprouts, red cabbage, carrots, and kale. Really just take about the right amount of veggies and throw them in a pan with about 1/4 cup of the broth/sauce from the slow cooker and cook until the veggies are soft and have absorbed most of the liquid.

  4. While that cooks mix the sriracha and mayo together. You don't have to use sriracha, you can use any hot sauce you like or just mix in a few tablespoons of the broth/sauce from the slow cooker to add in the extra needed flavor.

  5. Finally, just assemble the dish; start with a base of rice, add the chicken and veggies on top, drizzle with the mayo sauce, and add a sprinkle of sesame seeds if you like. We have a mix of dried seaweed, sesame seeds, and other things that pair well with soy sauce-like flavors and it's really good on top too.

This is a relatively quick and easy dinner to put together, and we really like it. I can thaw the chicken overnight, throw it in the slow cooker in the morning, and at dinner all I have to do is cook the rice and veggies and it's so good. 100% on our list of regular dinners.
