You'll Need The Following
- 1 pound of potatoes
- 1 pound of ground beef
- 1 cup of corn
- 1 tablespoon of minced garlic
- 1 teaspoon of lime juice
- 1 bell pepper
- 1 onion
- 2 teaspoons of a seasoning of your choice
- 1 teaspoon of salt
- 2 tablespoons of BBQ sauce
- 2 cups of sour cream
- 1 cup of shredded mozzarella
Cooking Instructions
- Start by washing the potatoes and cutting them into small pieces. You can leave the skins on or peel them, it doesn't matter.
- Once the potatoes are cut up it's time to get them nice and crispy. We do ours in the air fryer at 425 for 15-20 minutes, but you could oven bake them too if you don't have an air fryer. Just make sure there's some crispy potato cubes when you're done. We also like to sprinkle some Slap Ya Mama seasoning on the potatoes while they're cooking for some extra flavor, but that's totally optional.
- While the potatoes are crisping get everything else cooking. Cut up the pepper and the onion and throw those in a pan with the beef, corn, garlic, and lime juice. Put the heat on high until the meat starts to sizzle, then add the salt and seasoning (we use more Slap Ya Mama but any seasoning will do), turn the heat down to medium, cover, and let cook for about 10-15 minutes - until the beef is cooked through and the onion is soft and transluscent.
- Mix the BBQ sauce and sour cream together to make the topping, then assemble the dish by layering the potatoes, the beef mix, the cheese, and the sauce topping.
This is a super easy one we really enjoy, plus it helps get some veggies into us which is always a bonus!
