You'll Need The Following

  • 2-3 medium carrots

  • 1 medium head of broccoli

  • 1 pound of thin cut steak

  • 1 tablespoon and 1 teaspoon of turmeric

  • 1/4 cup of soy sauce

  • 2 tablespoons of minced garlic

  • 6 tablespoons of brown sugar

  • 1 tablespoon of sambal oelek

  • 1 tablespoon of white or rice vinegar

  • 1 tablespoon of lemon juice

  • 1 tablespoon of grated ginger

  • 2 tablespoons of honey

  • 2 cups of rice

  • 1 teaspoon of curry powder

  • 1 teaspoon of salt

Cooking Instructions

  1. Cut the carrots into small rounds and the broccoli into small pieces. You can just do the florets with small stems or include as much of the stems as you want, it doesn't matter.

  2. Put the carrots and broccoli into a pan with 1 tablespoon of turmeric and like 1/4 cup of water. Turn the heat to medium and cook for 10 minutes covered, essentially letting the veggies steam in the water with turmeric.

  3. While the veggies are cooking chop up the meat. We got bottom round that was already thinly sliced but in like big rectangles so I just sliced them into thin strips.

  4. Now to make the sauce by mixing the soy sauce, minced garlic, brown sugar, sambal oelek (or anything spicy, I've used gochujang before too), vinegar, lemon juice, ginger, and honey.

  5. Once the veggies are done steaming just leave them in the pan, add the meat and sauce, put the cover back on, and cook for another 15 minutes to cook the meat through and let it all soak up that flavor.

  6. While that's cooking get the rice going. We do a 1:1 mixture of water and rice, boil the water and add the rice then cook on low for 15 minutes but however you make your rice is perfectly fine. Add the salt, curry powder, and 1 teaspoon of turmeric to the water as it's boiling so the flavor gets in the rice.

After that just plate up the rice, put the beef and veggies over top, pour on a bit of the sauce from the pan it was all cooking in, and enjoy!

I really loved this one so much, it's 100% going in our list of staple meals.
