You'll Need The Following


  • 2 pounds of ground beef

  • 1 onion, diced

  • 2 tablespoons of minced garlic

  • 3 tablespoons of butter

  • 2 boxes of Mexican Style Rice-A-Roni

  • 1 can of diced chilies

  • 1 can of corn

  • 4 cups of beef broth

  • 1 cup of shredded cheddar cheese

Cooking Instructions


  1. Chop the onion and throw it in a pan with the minced garlic and ground beef. Cook until the beef is browned through, then add the butter and let it melt - do not drain the beef!

  2. Add the beef broth and cook on low 2-3 minutes, just enough to heat the broth through.

  3. Take the flavor packets out of the Rice-a-Roni and add the rice to the mix, cooking about 5 minutes or so to let the rice absorb the liquid.

  4. Add the chilies without draining them, but drain the corn before adding it in. Add the seasoning packets from the Rice-a-Roni and cook the whole thing on low heat, covered, for 25 minutes.

  5. Once it's done remove the pan from the heat, add the cheese on top, and put the cover back on for 5-ish minutes, or until the cheese melts and makes a nice layer on top.

You can eat this as is, serve it as a dip with tortilla chips, or use it as a tortilla filling so it's super versatile. The last time we made these we did tortillas with a bit of sour cream on top and by the stars they were so good. This is going in our list of staple meals because it's quick and easy and so hecking tasty!
