1 serving frozen Steamed Rice|1½ teaspoons rice vinegar|¼ teaspoon sugar|Pinch salt|1 (7 by 8 inch) sheet nori seaweed, halved crosswise|1 baby cucumber, sliced
Microwave the frozen rice for 2 to 3 minutes and put it in a small bowl. Stir in the vinegar, sugar, and salt. Put a piece of parchment paper (slightly bigger than the nori) on a clean, dry work surface, and lay one piece of nori on it, horizontally. Using wet hands or a spoon, spread half the rice over the nori. Put half the cucumber slices on the rice. Pick up the edge of the parchment and roll it up like a jelly roll. Hold the roll tightly to form a good shape. Make another roll with the remaining ingredients. Wrap each roll in a paper towel, and store them in the vegetable compartment of the refrigerator. Cut the sushi rolls into 1-inch pieces and put them in a bento box.
