Nonstick cooking spray
½ small onion, diced
¼ cup chopped broccoli
1 dozen large eggs
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
4 slices bacon, cooked and crumbled
½ cup shredded cheese
Preheat the oven to 350ºF.
Spray a 12-cup muffin tin with nonstick cooking spray.
Spray a medium skillet with cooking spray.
Over medium heat, sauté the onion until beginning to soften, about 3 minutes, then add the broccoli and cook another 2 minutes until soft and bright green.
Set aside.
In a large mixing bowl, beat the eggs until combined.
Add the spices, bacon, cheese, and vegetables; then stir to mix.
Evenly distribute the filling among the 12 cups of the muffin tin.
Bake until cooked and light brown, about 20 minutes.
Serve, or freeze individually for quick breakfasts.
