Recipe
Bring a large saucepan of water to a boil and add the somen noodles.
Add a cup of cold water when the water begins to boil over and bring the water back to a boil before turning off the heat and draining.
Run cold water over the cooked noodles and drain well.
Trim and discard the tips of the enokitake stalks and roughly chop the rest of them.
Heat the soup ingredients in a saucepan but do not let boil.
Add the noodles and mushrooms to the soup and heat for 2-3 minutes.
Transfer the soup to 4 serving bowls, garnish with the chopped mitsuba and serve.
