Candied Jelly Bug Larva

Thick, chewy Jelly Bug Larva, candied in syrup.

• The larva are boiled in the syrup until a thick shell has formed around the flesh.
• The larva are allowed to sit for some time, the pot being gently shaken or stirred with a flat edge.
• When the syrup has cooled sufficiently (but still remains hot), the larva are picked out with Chopsticks and set to fully cool and dry on a bedding of leaves.

Boiling

Cinnamon and sugars may be added to the boiling syrup as available or preferred.

A basket's worth

A warm amber color, with flecks of bright yellow and red.

A thumbprint or less.
