I know there are way more than this, but I'm keeping it short and looking for other people to help me make it longer.

Selkie.
(Also you put fairy twice. I might make instead Fae and Pixie.)
Goblins
Nymphs
Vampires
Trolls
Ghosts?
Zombies?
Humans (but LOTR style were they live much longer than we do)
Speaking of LOTR you've got Hobbits
Brownies/Hobgoblins/Domovoy/Other household spirits
Jinn
Angels
Demons
Many types of half-man half-animal combinations
Werewolves / other Were creatures
Dragons etc
Witches/Warlocks/Mages/Wizards/Sorcerer(esses)
(Like 10,000 different types of Fae)
friends
And many more I'm not remembering at the moment
Gargoyles.
(Also gonna geek here. The men in LotR did not live long. It was Aragorn's Numenorean lineage that gave him his many years.)
Kitsunes, y’all.
Elementals
Skeletons
If you want to make an ever expanding list, this is one way to do it.
I prefer to define how the races relate to each other, rather than have a shopping list like the D&D bestiarys
Like an evolutionary tree.
Are humans unrelated to other species? , Are 'fae folk' kindred species defined by a magnificent magical heritage?
Are long living or magical races disadvantaged by the faster breeders?
That way the different races actually have a place it 'fit in' to the narrative
The fact no one brought up orcs yet honestly amazes me lmaooo
