one thing that helps me is having a name first, (I usually look up names pertaining the ethnicity I want to roll with) and then give my characters a description and personality as well as backstory after that, or sometimes I start with the faceclaim, and the looks, and do everything else after.
But creating Oc's for me is easy, because I like molding my Oc into things im not, like tall, smart, pretty stuff like that.
But I get it, when I first started roleplaying it was hard for me to make Oc's everytime I joined a new RP.

Most of my current OCs are caring people because it reflects how I feel about myself and what I want to be. I feel like a bad person, if that makes sense. It's a long story for sure. Anyways, that might help. I'll see what I can do.

You know what? I decided to just say frick it since I'm holding this back. (Besides, assuming this coffee shop also does baked goods, Aki would definitely be a huge help)
Name: Aki Miyoshi
Age: 19
Gender/Pronouns: Male, he/him
Orientation: Panromantic asexual
Appearance: Aki has short and messy two-tone hair. It is half pastel purple and half pastel green. He is also quite tall, being 6'1. (I don't know what else to say. I suck at describing this kinda stuff)
Personality: Aki is an incredibly caring and outgoing person. He loves making friends, and he can see the best in everyone. He is also quite optimistic and loves to share his happiness with others, usually through baked goods that he made. However, Aki does not respond well to conflict, and he is easily worried.
Backstory: Aki has been baking since he was little, seeing as his parents used to run a bakery. He was always pretty good at it, and he loved making people happy, so it became his passion. He was working at his parents' bakery in Japan until it started losing business. People just seemed to not enjoy baked goods as much. He took the opportunity to travel, and that's how he ended up where he is now.
Other: He just wants to make the world a better place.

Carson redid his bun for the third time that morning. It just kept falling out, damn thing. Lucky for him, the shop had just opened so the stream of customers was pretty slow. He had time to grumble to himself about his hair troubles without people thinking he was crazy, which he did as he fixed it.
Gwendolyn entered the bakery, purposely inhaling through her nose so she could smell the freshly baked bread and other goods.
She loved it here, it was her favorite place in the entire town. She liked its rustic and simple aesthetic look, she waited in line, an older man in front of her, when he stepped away she stepped up to the register and said
"I would like a loaf of rye bread please." Her tone respectful and indicating she'd be able to wait as long as possible, there was no rush.
Carson looked up from where he was fiddling with the register after the customer before her and smiled a little. "Gwen, I've told you before, you don't have to be so professional with me. You've been coming here for how long now? I'll have your bread out, give me a second."
Gwendolyn gave a pure, small smile.
She used her hands to gesture to the entire bakery, her eyes drank in the entire interior, as she did every time she came inside.
"About six months and 3 weeks I think." She said with a smile, she could literally count how long she'd been coming to the bakery; six months, three weeks and 4 days.
"You know I like speaking like that to show I respect you, and am willing to wait, I don't like using language any less because I feel it doesn't signify how much I really do respect this place." She said giving him a twenty dollar bill, even though the cost was only nine fifty, she always gave more than needed, after all the bakery deserved it by a far.
"Keep the change" she said briskly to Carson, looking up and giving him another soft smile.
Carson rolled his eyes playfully, taking the cash. "Whatever you say Gwen." He yawned as he wandered back to the bakery, grabbing her usual order and heading back up to the counter. "Hot and fresh, just like you like it."
Gwendolyn gave a small smile, accepting the bread and turning away. She strived towards the door, her dress skirt flowing wildly behind her, she opened the door, and before she left she turned back towards Carson.
"Hey Carson?" she said loudly considering everyone else had left.
she went ahead and finished the question with "Im free all day, maybe you could tell me what time you get off, and I can swing by here and see you, considering I have nothing else to do."
She sets the bread in the wood woven basket she brought with her, casting a hopeful look towards Carson.
