Be subtle, first of all. The big no-no is to have a character say "they're the happy one," or worse, have the character themselves say that.
They can be "the happy one" without being happy all the time, too. Humans dont follow some kind of personality coding. Also, give them their own quirks and interests, their own goals and dreams.
That's all pretty basic, but I hope that helps!

All of my characters fall into a very basic categories as well (the stubborn one, the childish one, the protector etc…). How i make them like this without being pandering is having them not always fitting into their category. It actually is really interesting to see a character who is normally laid back get super nervous about something. Ask yourself "what sets them off?" "What can cause them to act differently?" "What groups of people do they let their guard down?"
Also, think about yourself in real life :) Even though we might have a general characteristic that defines our personality, we feel all other emotions too :)
Try to remember that the happy character should also be sad and angry at times, and the introverted character can be super talkative and sassy. Your character doesn't have to act one emotion all the time. :)
