Oooh this is an interesting concept! What kind of apocalypse are you thinking of?
Unicorn: pony-sized feral goat (could also be a deer, but a true horn rather than an antler makes more sense) with horns that grow fused together and a symbiotic toxin-neutralizing (or radiation-neutralizing) fungal or bacterial culture on its skin and fur. (And now, my mind is thinking "booch goat.")
Basilisk: either a mutated vulture with reptilian traits, or a mutated Gila monster. Has some sort of paralytic attack (either chemical or psychic); may also spit venom.
Satyr: javelina converging towards primate.
