Do you mean would it be offensive to defy a real religion by creating a fictional one for your characters to practice?
Then personally, no, because fictional and real life are very different. It's a different matter when you actually believe in the fictional religion, I would think. Though I'm not very religious, I do know that there aren't any rules against writing fictional religion.
I wouldn't think so, I mean, as long as you know it's fictional and you don't believe in it yourself then everything should be completely fine.

I agree with @NutEllaDraws-Is-Staying-Positive— . As an also religious person (I'm Roman Catholic), writing a religion (or religions) for your story shouldn't be a problem. You aren't saying "this is what I believe" you are saying "this is what these fictional characters believe" and those are two very different things.
Disclaimer: To be fair, my family is quite liberal for Roman Catholics - to the point where my parents had no problem letting me read the His Dark Materials trilogy (or really anything I wanted to read at all, so long as it was age appropriate). My mom especially even encouraged me to ask questions and find out the answers (which is what I credit with me remaining both Catholic and knowledgeable on the current state of things when a lot of the kids I grew up with mostly went in one of two directions: they're either no longer religious in any sense of the word or they are overly religious and stick their heads in the sand and ignore things that doesn't completely conform to things they've been told their whole lives).
