This is probably an extremely stupid question, but new to the site and wondering what the heck I write in 'Physical Variance' for my races. Anyone able to help me out on this?

What do you mean by 'Physical Variance'?

what about them can differ without that making them another race? Does this race have purple eyes? Does this race have white hair? Can characters still be part of this race if they are missing certain things, like a mark on their body or a special ability?

Well, I mean, all that sounds like stuff that's totally up to you, fam. As a general rule of thumb, however, I'd suggest making every member of your race share the same basic characteristics without much variation. Any individuals missing one or more of those traits might have hybrid or mutated genes. If nothing else, this consistency helps make it very clear whether someone is part of a certain race or not.
