So I'm stuck between two perspectives. The plot is something I saw in a tumblr post that I want to run with, but I'm unsure of which perspective to choose. The idea is that there's a knight's guild that a woman disguises herself as a man to join, but there are several other members that did just the same thing, including her new bunkmate. Gay highjinks and other undecided plot stuff ensue. My problem is picking which perspective is more interesting to write: the incoming member scared of being found out or the bunkmate, determined not to be found out. Any input?

Depending on where you write it you can write it in different perspectives like Rick Riordan does. A lot of fanfic writers do this

You might want to go with both. To decide, I'd recommend writing the beginning of the story twice –once for each perspective. Read it over, share it with others, and see which one is best.
