(well, what if she takes off her necklace and sets it on the counter. Your character doesn't see her do it, so when he sees the necklace, he doesn't know it's hers and he takes it.

Skye suddenly froze, quickly forcing himself to relax. There was a hunting group that had come in. Just normal hunters. Skye shook his head ordering another drink. They're not a threat. They're simple hunters.
Valentina looked back at the guy, then down at the counter. She tapped her foot anxiously. It was time for her to get the hell away from this dude.
With a deep breath, she stood up, took her last shot, and took her necklace off. Is was made of pure gold, something extremely valuable that she didn't want around somebody so dangerous. She slipped it in her pocket and left to use the restroom before leaving the bar, but she didn't notice when her necklace slipped out of her pocket through a small hole in the bottom.
Skye finished his drink, asking for another, lighter one. Looking around some more he saw something shiny on the ground, picking it up he saw it was a gold necklace. Someone must've dropped this he thought, Oh well, their loss, my gain he tucked it into a pocket on his jacket, the edge of the chain sticking out.
Valentina returned to the bar to pay, flashing the bartender a flirty smile. She let her hair down and felt her pocket to make sure her necklace was still there… but it wasn't. Her eyes widened, and she scanned the counter and the floor, feeling herself start to panic slightly.
"Have you seen my necklace?" she asked the bartender, voice shaking. He shook his head and gave her a pitiful look. She looked again, feeling her pocket, scanning the room. Did I drop it in the bathroom? she thought.
That's when she noticed a gold chain sticking out of the pocket of the guy next to her.
Skye tensed as another man came in, obviously another huntsman. But, unlike the ones before him, he moved with purpose. Skye tensed even more, forcing his features to remain emotionless and he downed his drink and paid the bartender. Keeping one eye on the Hunter he carefully made his way to the door, slipping outside and double checking his hood was up he walked slowly away. Forcing himself to stay slow, and even adding a waver in his step as if he was tipsy from alcohol, he hoped this would deter any unnecessary suspicion. Because where there was one Hunter, there were always more.
