I've never been more confused by your actions? You ignore me for what seems like weeks and then jump for joy when I ask to hang out. You showed me disdain and annoyance when I had your best interests in heart. I asked to hang out so that I could obtain what you still had of mine, not to renew our friendship. You are the exact opposite of me; where I am organized and reserved, you are sporadic and outgoing. They say opposites attract, and that could be why I had such a hard time leaving you alone about your decisions–I don't and didn't want to lose you. You are my friend, and there is no one I rather jam to Disney with.

I'm thinking about doing like a "book" where each chapter would be a long letter to a different person, but there would be one steady person you would get updates from on what's going on in their life or something like that. Obviously, this one is long but yeah…

Is it a full story or a short story? If it's a long story, there'd need to be more between each letter, but if it's a short story, you don't even really need outside context. Just make sure each person has a unique way of talking, maybe even purposely have a character misspell things a lot or generally be less formal than the other. And make sure it sounds like an actual human is writing a letter.
