So I'm still a ways away from publishing, but how does one go about finding a cover artist?

Well, theres tons of ways in my opinion! Any site that has artists on it, instagram, twitter, deviantart, etc. are great places to start looking. Artists often open commissions and, if they do, should have some type of commission sheet on their page or a link to it somewhere on their profile. Many artsists don't specifically say they do cover art, but it never hurts to shoot them a dm and discuss it with them if you're willing to pay for it! Once you find an artist whos art you like and think fits the style you want on your story, then you can go ahead and chat with them to see if they're willing to work with you!
