Italian Christmas cookies: I found this recipe about 4 years ago, and I've made them every year around Christmas since. They're lemon flavored and really easy to make. They've kind of become a family favorite- my grandma has asked me to bring them over for holidays:

Earl grey dark chocolate chip cookies: Made these for valentines. They're soooo good. It says use fancy chocolate, but regular dark chocolate chips are fine.

Vanilla Chai shortbread cookies: also a fun favorite. They hold shape well, so you can use a cookie cutter and pretty reliably get a good shape. This website also has a similar recipe for lemon earl grey shortbread cookies if you click around a bit.. The recipe is almost the same, but earl grey instead of Chai tea, and lemon juice instead of water in the frosting, no spices added. The earl grey ones are a favorite among my friends.

And one of my own- pumpkin spice shortbread:
Cookie dough:
1 cup unsalted butter
1/2 cup confectioners sugar
2 cups flour
1/2 tsp salt
4 tsp pumpkin pie spice
1 tsp vanilla extract
Butter+sugar, mix
Add flour, salt, pumpkin pie spice, vanilla, mix until dough consistency
Roll out dough and cut out cookies
15-20 minutes at 350
Icing:
1 cup confectioners sugar
2 tbs water
1 tsp vanilla extract
1/4 tsp cinnamon (may need more, to taste)
Mix together icing ingredients, spread over cookies and leave icing to dry. Add sprinkles while wet if desired
