Watch Fullmetal Alchemist(Trust me it's amazing but also S U P E R depressing). I mean if you want a list of characters NOT to get attached to, I could probably give you one… It'd be relatively short but still important because when someone dies, it hits you HARD. Also, watch Fullmetal Alchemist: Brotherhood before you watch the 2003 version. While I personally enjoy FMA2003 more myself, it's not considered "canon" by a lot of fans, and if you look for ANY art at all, you'll get like a million spoilers for FMA:B.

Puella Magi Madoka Magica(or just Madoka Magica) is also a good one, but it's shorter. They get a lot done in the 12 episodes that there are. It may come off as a lighthearted Magical Girl anime, but it starts to get dark around the third episode. Another one where you probably shouldn't get attached to the characters. Definitely a good one, though.

My Hero Academia/Boku No Hero Academia is a newer anime and is AWESOME. Especially if you're into fighting. If not(like me), it's still great because the animation style is unique, the characters are incredible, and, well, it's difficult to find reasons to DISlike it.

Voltron: Legendary Defender(Idk if it's technically an anime, but it's still freaking awesome) is another good one. It's targeted at younger audiences, but a lot of people of varying ages REALLY like it.

Not sure if these were already suggested or not, but they're my personal favorites and I just needed to share. Happy watching(hopefully)~! :)
