In some of my stories, I've included things like griffins, gorgons, mermaids, fairies, genies, werewolves, and satyrs. Hope that helps :)

Jormungandr the World Serpent (or whatever Monster Hunter equivalent), Nidhogg the Dragon that bites the roots of the World Tree, Ratatosk the squirrel that carries insults from the top of the Tree to the bottom and vice versa, the Immortal Phoenix, Oni, varying Youkai, wyverns, drakes, amphipteres, cockatrices, krakens, Leviathans, Titans, Golems, etc.
