What's your setting like? Climate? Source inspiration for the general aesthetics?
I ask because if it's medieval European fantasy and I say, "Include a penanggal or penanggalan" or if it takes place in a desert and I say "hippocampus" then it's like, 'why, that doesn't fit in'.
Think of your beasts in terms of hunter and prey. An ecosystem needs ground foragers and upper canopy foragers. Those foragers need to be scared of something. Take inspiration from our own extinct species, like Tasmanian Tiger. Or odd ones like marine iguanas, flightless birds, and platypus. Bears, for the most part, don't attack humans unless directly threatened. Tigers on the other hand… Have you seen those videos of them coming out of the forest to chase down motorists? You probably need at least one of each type of hunter.
