In my universe, The protagonist is a normal human Well for at least one episode who's in a class with half-demon/angel (human, fairy, oni, vampire, witch, succubus, and niku) and some human girl and two werebeasts who basically are forced to hunt the protag (The half-demon/angels)

Well the supernatural creatures have been living aside humans since the '80s, humans are somewhat suspicious towards supernatural species but I don't want to use the oppressed mages trope since logically a vampire can beat up a human without breaking a sweat, probably but there still are races that are kind of treated badly, like Niku that are treated as zombies with brains and other species has their opinions on each other

So how will the world change with supernatural being in the mix? Who will be on top? How classes be affected? Will Shrek exist?

I have a similar system to this in my mind honestly, I don't know if this will help but I'll put it here anyway.

Ranking Order:

  1. Gods
  2. Angels
  3. Demons
  4. Humans
  5. Shapeshifters (non-animal)
  6. Merfolk
  7. Were-folk
  8. Vampires
  9. Witches
  10. Faeries
  11. Skeletons
  12. Zombies
  13. Demi-Gods

The humans and supernatural beings have been living side by side since the dawn of time, however, as time has gone on, the humans have begun to show more racism (or specism) towards the supernatural folk and start calling them mutes—like mutations.
Since humans are higher on the hierarchy than most of the supernatural folk, they think they can do whatever they want to them, despite the fact that folk like the vampires and zombies will most likely kill them.
Around the 21st Century, things start to calm down a bit and specism isn't as dominant as it was—though there are still issues with it—and human society starts to accept the supernatural folk as equals (though they are still often referred to as mutes).

A lot of the mutes accept the name given to them. They know that not every human is going to accept them, and at least one character in my story refers to themselves as a mute.

Now when it comes to breeding…
Should a child be born to parents of different species, then there is a 90% chance that the child will be the higher ranking species.
E.g. A human mother and a witch father = 90% chance of being human.

Oh I forgot to mention specism among the mutes!
So, going back to the ranking system, there is obviously going to be some harsh words to say about it from the perspective of each individual species.
For example; the vampires believe that they should be ranked above the were-folk. They treat the were-folk like the animals they are, patronising them despite the fact that the vampires rank lower than them.

I think that's everything???
