2 to 2½ pound boneless beef chunk roast
1 tablespoon Cajun seasoning
9 ounces Green Giant Niblets frozen corn
½ cup chopped onion
½ cup chopped green bell pepper
14.5 ounces diced tomatoes, undrained
⅛ teaspoon pepper
½ teaspoon red pepper sauce
Spray 3½- to 4-quart slow cooker with cooking spray.
Rub entire surface of beef roast with Cajun seasoning.
In cooker, place beef.
Top with frozen corn, onion and bell pepper.
In small bowl, mix tomatoes, pepper and pepper sauce.
Pour over vegetables and beef.
Cover; cook on low heat setting 8 to 10 hours.
To serve, cut beef into slices.
Remove corn mixture with slotted spoon, and serve with beef.
